The rollout of  “Overnight Oatmeal,” a new breakfast item that the Portland Public Schools Food Service Department developed, has been rescheduled to the fall, due to production difficulties.

The plan had been to serve Blueberry Overnight Oatmeal for breakfast at Portland's elementary schools on May 22, but that will no longer take place, said Food Service Director Jane McLucas. Although the item was taste-tested with students at three schools this spring and proved a hit, there have been some technical difficulties producing the item on a larger scale, McLucas said.

She said that because the school year is almost at an end, the launch will be delayed until the fall, on a date to be announced closer to that time.

“We are eager to begin serving this nutritious and delicious new breakfast item to our students, and want to ensure we are able to do that in a consistent manner across all our schools,” McLucas said.

The idea for overnight oats for was born out of the Food Fuels Learning initiative, a group committed to addressing food insecurity among students. Working with Portland Public Schools staff and community members who are concerned about childhood hunger and the quality of school food, Food Fuels Learning followed the leadership of parents who proposed oatmeal as a menu item.

McLucas worked with Kitchen Manager Lori Beatham to develop a recipe that met USDA nutrition requirements, could be transported from the PPS Central Kitchen to schools across the district, and was appealing to students.
